Ingredients
  

  • 1 pound ground chicken 93% lean
  • 3 tablespoons plain breadcrumbs divided
  • 2 tablespoons milk
  • 1/4 cup grated Parmesan divided
  • 1 large egg
  • 1/4 cup finely chopped onion optional, squeezed dry
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried Italian seasoning
  • 1 tablespoon olive oil plus extra for brushing
  • 1 cup warm marinara sauce divided
  • 4 ounces part-skim mozzarella sliced or shredded (about 8 half-ounce portions)
  • 8 slider rolls such as Hawaiian or soft slider buns
  • 2 tablespoons chopped fresh basil or parsley optional
Optional toppings
  • 1 tablespoon melted butter mixed with 1/2 teaspoon garlic powder optional

Equipment

  • 1 Rimmed baking sheet or 9×13-inch baking dish

Method
 

Prepare the panade and patties
  1. In a small bowl mix 3 tablespoons breadcrumbs with 2 tablespoons milk and let sit 5 minutes until softened.
  2. In a large bowl combine ground chicken, the soaked breadcrumbs, 2 tablespoons grated Parmesan, chopped onion (if using), egg, salt, pepper, and Italian seasoning; mix gently and form into eight even 2.5-inch patties.
Sear and assemble
  1. Preheat the oven to 375°F and heat 1 tablespoon olive oil in a 12-inch skillet over medium-high heat; sear patties 1.5–2 minutes per side until lightly browned and transfer to a rimmed baking sheet.
  2. Top each patty with about 2 tablespoons warm marinara and a 1/2-ounce portion of mozzarella; place patties on the sheet with space between them.
Bake and broil
  1. Bake at 375°F for 8–10 minutes until an instant-read thermometer reads 165°F in the center.
  2. Switch oven to broil and broil 2–3 minutes until cheese bubbles and edges begin to blister—watch closely.
  3. Toast the slider rolls cut-side under the broiler 1–2 minutes if desired; assemble each slider with patty, extra sauce if wanted, and top roll, then sprinkle with remaining Parmesan and chopped basil.
  4. Serve warm.

Notes

For juicier sliders use 93% lean ground chicken and the milk-soaked breadcrumbs. Toast cut sides of rolls to prevent sogginess. Patties can be formed 1 day ahead. Cooked or frozen patties reheat best when baked and then assembled on fresh rolls.
