Spiced Carrot Ginger Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium yellow onion finely chopped (about 1 cup)
  • 2 garlic cloves minced
  • 2 tablespoons fresh ginger grated (about a 2-inch piece)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground black pepper
  • 1.5 pounds carrots peeled and cut into 1/2-inch pieces (about 4 cups)
  • 6 cups low-sodium vegetable or chicken stock
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley chopped, plus extra for garnish
  • Optional: 1/3 cup light coconut milk or plain yogurt optional for creaminess

Equipment

  • 1 5- to 6-quart Dutch oven or large heavy-bottomed pot
  • 1 Immersion (stick) blender or countertop blender
  • 1 Sharp chef's knife and cutting board

Method
 

Prepare the vegetables
  1. Peel and cut the carrots into 1/2-inch pieces, finely chop the onion, mince garlic, and grate the ginger; measure spices.
Sauté aromatics
  1. Warm 1 tablespoon olive oil in a 5- to 6-quart pot over medium heat until shimmering; add the onion and cook 5–6 minutes until softened, then add garlic, ginger, 1 teaspoon cumin, 1/2 teaspoon coriander, 1/4 teaspoon black pepper, and a pinch of salt and cook 30–45 seconds until fragrant.
Simmer carrots
  1. Add the carrots and 6 cups low-sodium stock, bring to a simmer, cover partially, and reduce heat to maintain a gentle simmer for 18–22 minutes until carrots are very tender.
Blend and finish
  1. Remove the pot from heat and purée the soup with an immersion blender until smooth (or blend in batches in a countertop blender, returning soup to the pot). Rewarm gently over low heat if needed, then stir in 1 tablespoon lemon juice and 2 tablespoons chopped parsley.
Adjust and serve
  1. Taste and season with 1/2 to 1 teaspoon kosher salt as needed; stir in 1/3 cup light coconut milk or yogurt if using, and serve topped with a drizzle of olive oil, chopped parsley, and toasted pumpkin seeds if desired.

Notes

Use low-sodium stock to control salt, and add salt after blending. If the soup is too thin, simmer uncovered a few minutes to reduce or add 1/2 cup grated carrot purée. For a creamier finish, stir in coconut milk at the end rather than during cooking to preserve flavor.
